50 gmbutter
1onion roughly chopped
1carrot roughly chopped
50 gmcelery roughly chopped
50 gmsmushroom trimming
2fish bones
50 mlwhite wine
Cold water
Bouquet Garni
1bay leaf
10 gpeppercorns
5 gcloves
1parsley stem
1 Muslin cloth

Steps

Melt the butter in a saucepot, saute the mirpoix & fish bones.

Deglaze with wine,add water and bouquet garni,simmer for 30-35 minutes.

Strain and use for making dishes.
