I’ve been a fan of macaroni salad since I was a kid. I always loved my mom‘s recipe. I would literally eat it as a snack! This is a souped up version with a lot of color and a lot of taste. Perfect for summer!

Ingredients

  1. 4 Ccooked elbow macaroni
  2. 1hard-boiled egg (chopped)
  3. 1/4 CMayonnaise
  4. 1 tbsYellow Mustard
  5. 1medium Celery Rib (diced)
  6. 5Black Olives (sliced)
  7. 3 tbsPurple Onion (diced)
  8. 2 tbsDill Pickle (diced)
  9. 2 tbsRed Bell Pepper (diced)
  10. 1 tbsDill Pickle Juice
  11. 2 tspDill Weed
  12. 1 tspCrushed Red Pepper
  13. 1 tspGarlic Powder
  14. Salt
  15. Pepper

Cooking Instructions

  1. 1

    Cook pasta to desired firmness, drain and cool.

  2. 2

    Mix all ingredients gently and place in airtight container in refrigerator for at least two hours before serving to let flavors meld.
