Ingredients

  • 1 poundtilapia filets
  • 1/8 cupoil
  • 2 Tblground cumin
  • 1 tspgarlic powder
  • 1 tsponion powder
  • 1 tsppaprika
  • 1 tspchili power
  • 1 tspcilantro leaves (dry)
  • 1/2 tspground red pepper
  • 1 1/2 cupplain Greek yogurt
  • 3 TblGOYA Cilantro Cooking Base (found in Hispanic food section
  • 2 tspground cumin
  • Flour tortillas
  • Taco toppings such as:
  • Tomatoes, jalapenos, lettuce, onion, avocado, cheese, salsa,
  • corn, beans, etc, etc

Steps

  1. 1

    Combine fish, oil, and spices in large ziplock. Marinate for an hour or more in the fridge.

  2. 2

    Combine yogurt, cilantro base, and cumin in airtight container. Refrigerate for an hour or more.

  3. 3

    Bake fish at 350 for 15 minutes (or until it flakes with a fork)

  4. 4

    Put chunks of fish on small tortillas, add sauce and toppings.

Honestly, I put my recipes here so that I can easily look them up myself (although some are made often enough that I no longer need the recipe - like the pork chops, my son's favorite). That being said, these are the tried and true dishes I make on a regular basis for my family. But, of course, I'm glad to share...enjoy.
