these biscuits never last long after they are cool as they will soon be eaten.

Grate the cheese and mix it with the flour; rub in the butter and season with salt and pepper. Form into a stiff paste with the egg yolk, adding a little cold water if necessary.

Roll out thinly and using a shell shaped cutter cut the paste into shape.

Bake in a moderate oven till crisp.

Leave to cool before putting them into an air-tight tin.
