Cook rice in a pot and reserve

Heat oil in pot and brown meat. When meat is cooked, remove from pot and drain fat through a colander. Discard fat.

Cook onions and garlic in pot. Season with salt and pepper.

While onions and garlic are cooking, mix tomato paste with water, dried herbs, and salt & pepper.

When onions and garlic are cooked, return cooked meat to pot. Add tomato paste mix. Adjust seasoning.

Remove pot from the heat, and stir in beaten eggs.

Preheat oven to 350

Stuff seeded peppers.

Pour canned tomatoes over peppers.

Sprinkle peppers with cheese before baking.

Bake for about an hour at 350. If peppers start to brown too early, cover with foil.
