Black pepper Lemongrass Chicken with Oolong Rice.

Steps

Boil water and brew 2 cups of oolong tea.

Cut green onions and shallot (minced)

Tear outer layer off lemongrass and dispose, then cut lemongrass into small pieces and put into blender preferably. You can dice, but I like to blend it so its edible.

Chop chicken into slices.

Put one cup of rice with one and a quarter cup of oolong tea into rice cooker (or cook rice as you would normally boil without a rice cooker).

Add one quarter of your shallot to your rice while its cooking.

Heat up your shallot, green onion, and lemongrass in skillet until its slightly fragrant.

Add chicken to skillet and cook on medium high.

Add a small amount of white pepper, lime juice, balsamic vinegar salt to taste along with a dash of ginger.

After letting this cook for a while longer add copious amounts of black pepper. Not too much that its too strong for your pallet, but enough to give it some kick and make the chicken loom quite spotted. Sorry, I never measure things when I cook.

Once rice is done, fluff and let sit for a few minutes, it takes a rice cooker about the same time as the chicken takes to cook.

Put chicken and greens over the rice and enjoy. It goes well with a cup of oolong tea with milk and sugar to cut through the pepper and cleanse your pallet co continued enjoyment.
