Ingredients

  • 1 cupShrimp (optional)
  • 1 cupVegetable penne pasta (optional)
  • 2 tbspOlive oil
  • 3 tspGarlic
  • 1 dashCayenne pepper
  • 1/4 cupPine nuts
  • 1 bunchSpinach
  • 2 cupMushroom
  • 1 packagesFrozen veg stir fry
  • 1/2Lemon juice
  • 3 dashSalt
  • 3 dashPepper
  • 1/2 cupSun dried tomatoes in balsamic vinegar

Steps

  1. 1

    Marinate sundried tomatoes in balsamic vinegar

  2. 2

    Cook pasta, boil shrimp, sauté mushrooms

  3. 3

    Add E.V.O.O to pan, add minced garlic & allow oil to warm. Add frozen veggie stir fry stirring occasionally.

  4. 4

    When stir fry is thawed, add spinach and sun-dried tomatoes

  5. 5

    Toast pine nuts in skillet, mixing often so they don't burn

  6. 6

    Add pine nuts, juice from 1/2 lemon, salt, pepper, cayenne pepper. Sautée on low heat. Drain & and add shrimp. Drain & mix pasta with veggie stir fry and you're done!
