Spice cake with chocolate icing

Preheat oven to gas mark 6

Lightly grease cake tin with a little butter

Cream butter/sugar together until fluffy

Whisk eggs/cream together and add to butter mix little by little, mixing thoroughly

Add spices and vanilla to mixture

Add flour to mixture, little by little, mixing thoroughly
- 7
Add mixture to baking tray

Put in top tray of oven and bake for approximately 40 minutes or until skewer comes out clean

Whilst cake in oven make icing

In a small pan, melt together butter and sugar on low heat, stirring all the time

Once melted, turn up heat and allow to boil for 2 minutes

Whip cream with cocoa and cinnamon

Turn down heat to medium-low and add cream mixture

Mix well then turn off heat and allow to cool.

When cake out of oven and cool, spread icing over the top
