Ingredients

4 servings
  1. 2 tbspolive oil
  2. 2onion
  3. 1/2 tbspground cinnamon, coriander and cumin
  4. 2courgette
  5. 2chopped tomatoes
  6. 400 gramscan of chickpeas, drained
  7. 425 mlveg stock
  8. 300 gramsfrozen peas
  9. 250 gramscouscous
  10. 1 tbspharissa
  11. 4 tbspraisins, can also used dried sweet fruit

  1. 1

    heat the oil in a pan, then fry the onions for 5 mins until soft

  2. 2

    add the chopped courgettes, tomatoes, chickpeas, raisins and stock, then bring to the boil. cover and simmer for 10 mins.

  3. 3

    stir in the peas and simmer for 5 mins more.

  4. 4

    pour 400ml boiling water over the couscous, then stir in the harissa with 1/2 tsp salt. tip in any extra raisins / chickpeas, then cover for 5 mins

  5. 5

    fluff up couscous with a fork and serve
