Ingredients

  1. 1/2 lbwhole grain rotini pasta
  2. 4 tbspbutter
  3. 1 1/2 cuponion, diced
  4. 1 clovegarlic
  5. 1green bell pepper
  6. 1red bell pepper
  7. 2jalapeños, seeded and finely chopped
  8. 2 1/4 cupcorn
  9. 1/4 cupflour
  10. 2 cupchicken stock or milk
  11. 2 tspground cumin
  12. 1 tspchili powder
  13. 1/3 cupheavy cream
  14. 1 cupcheddar cheese, shredded
  15. 1/2 cupmozzarella cheese, shredded
  16. 2 cupchicken, chopped
  17. 1 1/2 cuptortilla chips, crushed
  18. 1salt and pepper to taste

Steps

  1. 1

    Cook the pasta for half the recommended time. Drain and set aside.

  2. 2

    In the same pot, melt the butter and saute the vegetables until tender, about 7 minutes.

  3. 3

    Sprinkle in the flour, stir, and cook for 2 minutes. Pour in the chicken stock or milk, increase heat, and stir until thickened.

  4. 4

    Stir in the spices, cheeses, cream, chicken, and cooked pasta. Transfer to into a large casserole dish. Top with crushed tortilla chips and bake at 350° F for 20-30 minutes our until hot and bubbly. Serve.
