Ingredients

4 servings
  1. 1 cupany small pasta
  2. 2 tbspOlive oil
  3. 1/2 cupChicken breast, cubed
  4. 1/2 cupOnion, diced
  5. 1 cloveGarlic, minced
  6. 1 can(14.5 oz) diced tomatoes w/ juice
  7. 1 cupMozzarella, shredded
  8. 1/4 cupFresh flat-leaf parsley, chopped (or 1/2 Tbsp of dried parsley)
  9. 1/4 cupBread crumbs
  10. 1/4 cupParmesan, grated
  11. 1 tbspButter
  12. 1Salt & Pepper to taste

Steps

  1. 1

    Preheat oven to 400?F

  2. 2

    Bring med. pot of salted water to a boil

  3. 3

    Add pasta and cook until tender, stirring occasionally (about 5 min.)

  4. 4

    Drain pasta and place in a greased 8x8 baking dish

  5. 5

    Meanwhile, heat olive oil in a med. saute pan over med. heat

  6. 6

    Add chicken and cook for 3 minutes

  7. 7

    Stir in onion and garlic, cook until onions are soft and chicken is cooked through, about 5 minutes

  8. 8

    Add chicken to the baking dish with pasta

  9. 9

    Stir in canned tomatoes, mozzarella, parsley, salt, and pepper

  10. 10

    In a small bowl, mix bread crumbs and Parmesan, then sprinkle over the pasta mixture

  11. 11

    Dot the top with small bits of butter

  12. 12

    Bake until the top is golden brown, about 30 minutes
