Soak the bulgur in water for about 30 minutes.

Knead the bulgur with cumin and salt, rubbing it well.

Add the ground beef and knead thoroughly until you have a cohesive dough.

To prepare the filling:

Sauté the onions in a little vegetable oil.

When the onions soften, add the ground beef and cook, stirring, until the mixture is dry.

Add the spices and pine nuts, stir, and cook until everything is done.

Add the sumac, stir, then remove from heat.

Shape the kibbeh dough into balls, then form each into a hollow shell. Fill with a little of the meat filling and seal well.

Fry in plenty of very hot oil until golden brown. Enjoy!
