  1. 8.8 lbsbeef round (pulpa bola)
  2. 2.2 lbssmoked bacon
  3. 1.1 lbssmoked pork belly
  4. 17 cupswater (4 liters)
  5. 4.4 lbstomatillos
  6. 2.2 lbstomatoes
  7. 4serrano chiles
  8. 1.65 lbschorizo
  9. 12large potatoes, partially cooked
  10. 3large onions
  11. 4 bunchescilantro
  12. 1 headgarlic
  13. Salt and pepper, to taste
  14. 4 tablespoonsbeef bouillon (consommé de costilla)
  15. 30or more yellow chiles (chiles güeritos)
  16. 4 bunchesradishes
  17. 25limes
  18. Maggi seasoning sauce
  19. Worcestershire sauce
  20. Chicken bouillon
  21. 1pot freshly cooked beans
  22. as neededTortilla chips (totopos),

    Wash the cilantro and let it dry.

  2. 2

    Peel and wash the tomatoes.

  3. 3

    Peel the head of garlic.

  4. 4

    Blend the tomatillos, tomatoes, garlic, 1 1/2 onions, and three serrano chiles with a little water.

    Bring the sauce to a boil with 3 to 4 more liters (12.5 to 17 cups) of water, depending on how much broth you want.

    Chop the bacon and pork belly.

    Fry all the bacon, then the pork belly.

    Drain when the bacon is crispy.

    Fry the beef, cut into thin strips.

    When the sauce is boiling, add pepper, beef bouillon, and salt.

    Add the beef and some of the bacon to the pot and let it simmer for about 40 minutes.

    Meanwhile, fry the yellow chiles (chiles güeritos).

    Squeeze about 10 limes to pour over the chiles along with pepper, salt, chicken bouillon, Maggi seasoning, and Worcestershire sauce.

    Chop the remaining cilantro, onion, and radishes.

    Fry the chorizo.

  16. 16

    Peel and cut the potatoes into small cubes.

  17. 17

    Parboil the potatoes and drain before adding to the chorizo; season with salt and pepper.
