Ingredients

  1. 1 bunchPalak (cut and chopped)
  2. 1large potatoes (cut into small pieces)
  3. 200 gmmushrooms (peeled and cut into halves)
  4. 2Capsicums (cut into cubes)
  5. 1onion finely chopped
  6. 2medium size tomatoes finely chopped
  7. 2green chilies finely chopped
  8. 6nos garlic pods finely chopped
  9. 1 teaspooncumin seeds
  10. to tasteSalt
  11. 1 teaspoonred chilli powder
  12. 1 teaspooncoriander powder
  13. 1/4 teaspoonturmeric powder
  14. 1/4 teaspoongaram masala powder
  15. 4 tablespoonscooking oil + for deep fry

Steps

45minutes
  1. 1

    Heat oil in deep wok fry potatoes and transfer it in absorbing paper.

    Fry capsicum and transfer it to a plate.

    Fry mushrooms and transfer it to a plate on absorbing paper.

    Heat oil in deep kadai splutter cumin seeds and garlic. cook till it get brown.

    Add onion, green chilies and cook till onion get transparent.

    Add red chilli powder, coriander powder, garam masala powder and turmeric powder.

    Mix it and add tomatoes cook till oil starts floating on all over masala.

    Add palak mix it, cover the lid  and cook it on high flame till it remain

    Add fried (capsicum, mushrooms and potatoes) and mix it well gently and cook till sabzi get dry.

    Finally add salt and mix it. Cover the lid and cook for more 3 to 5minutes on low flame.

    Palak mushrooms shimla aloo sabzi ready to serve. Serve this with chapati.
