Ingredients

  1. 1 lbSweet potatoes, unpeeled
  2. 1/2 cupPineapple juice
  3. 2 tbspButter
  4. 1 cupDrained crushed pineapple (In juice)
  5. pinchCinnamon
  6. pinchGround nutmeg
  7. pinchGround allspice
  8. Optional topping: 1 tbsp molasses or 2T Brown sugar
  9. Optional topping: Oatmeal
  10. 1/2 cbrown sugar, rolled oats (not quick), chopped pecans
  11. 1/4 cflour
  12. 1/4 tspcinnamon, nutmeg, allspice
  13. 3 tbspmelted butter

Cooking Instructions

    Boil sweet potatoes until tender, about 30 minutes.

    Preheat oven to 425°F.

    Grease 1 quart casserole dish.

    In a large mixing bowl, mashed sweet potatoes.

  5. 5

    Add pineapple juice and butter, beat until fluffy.

  6. 6

    Stir in pineapple, cinnamon, nutmeg, and allspice.

    Optional topping: Drizzle molasses/sprinkle brown sugar and dot with butter.

    Oatmeal topping: Combine dry ingredients, add melted butter, spread

  9. 9

    Bake, uncovered, for 15 minutes, or until thoroughly heated.
