I had wanted to try these for a long time, and last week I finally did. They’re perfect for the snowy weather right now. I’m in Tuscany and it’s snowing by the sea.

I had wanted to try these for a long time, and last week I finally did. They’re perfect for the snowy weather right now. I’m in Tuscany and it’s snowing by the sea.

Sauté the garlic in a skillet with a little oil, then add the mushrooms.

Add parsley, salt, and pepper, and cook for about 10 more minutes, deglazing with white wine.

In a bowl, combine the ricotta, flour, eggs, and a pinch of salt. Mix well.

Add the Parmesan cheese to the mixture and continue mixing.

Shape the dough with your hands into long ropes, then cut them with a knife to make gnocchi.

Salt the water and add the gnocchi. After 3–4 minutes, drain them and add them to the sauce in the skillet. Toss to combine and serve with fresh parsley.
