  1. 200 gramsVolkoren Penne
  2. 150 gramsGeitenkaas
  3. 1/2kleine watermeloen in blokjes
  4. 100 gramsRucola
  5. 50 gramsPijnboompitten
  6. 2klein witloof
  7. 4plakjes ham
  8. 2 1/2eetl olijfolie
  9. 1eetl limoensap
  10. 1eetl basamico
  11. 1eetl munt

  1. 1

    De pasta in een pan lichtgezouten water volgens de gebruiksaanwijzing beetgaar koken. Afgieten in een vergiet, afspoelen onder koud stromend water en laten afkoelen. In een kom scheppen.

    Alle ingrediënten voor de dressing in een schoon jampotje met schroefdeksel doen, goed sluiten en krachtig schudden. Versgemalen zwarte peper naar smaak toevoegen

    (zout is waarschijnlijk overbodig omdat kaas en ham al vrij zout zijn).

    De geitenkaas over de pasta verkruimelen. Watermeloen toevoegen. De dressing erover schenken en de salade losjes omscheppen. Rucola en pijnboompitten toevoegen.

    De blaadjes witlof lostrekken en over een ondiepe schaal verdelen. De pastasalade over de witlof verdelen en reepjes ham erop leggen.

    variaties
    ? In plaats van geitenkaas kunt u ook feta gebruiken. Neem liever geen losse stukjes feta maar een blokje, en laat dit 2-3 min. weken in een kom met koud water om de kaas minder zout te maken. Snijd de feta in blokjes of verkruimel hem. * ? In plaats van watermeloen kunt u ook blokjes honingmeloen, charentaismeloen of mango gebruiken. Druk het sap uit 2 eetl. versgeraspte gemberwortel en voeg dit toe aan de dressing.
