In a blender, combine the oil, onion, garlic, tomato, and parsley. Blend until very smooth.

Add all the spices and blend again.

Add the mixture to the ground meat and knead well by hand.

Grease a medium baking pan with a little oil. Shape the kofta into logs or patties as you like and arrange them in the pan.

Let the kofta rest for 30 minutes to 1 hour so the flavors can blend.

Place the pan over medium heat until the kofta releases its juices and turns light golden (about 3 minutes). Flip and cook the other side for 2 more minutes.

Drain any remaining liquid from the pan and save it in the freezer (you can use it later to flavor rice or soup).

Preheat your oven to 400°F (200°C). Place the pan in the oven and broil for 5 minutes.

Optional: For a smoky flavor, place a small heatproof bowl with a little oil and a piece of hot charcoal in the center of the pan. Cover quickly and let it sit for 10 minutes.

Serve hot on a plate lined with chopped parsley. Garnish with more parsley or lemon slices as desired.
