Ingredients

  • 3 1/4 cupflour
  • 1 1/2 tspsalt
  • 1 tspground nutmeg
  • 1 tspground cinnamon
  • 2 tspbaking soda
  • 3 cupsugar
  • 1 cupvegetable oil
  • 4large eggs
  • 1/3 cupwater
  • 2 cuppeeled and shredded zucchini
  • 1 tsplemon juice
  • 1 cupchopped walnuts

    Preheat oven to 350°F.

  2. 2

    In a large bowl mix together all dry ingredients and set aside.

  3. 3

    In a medium bowl, beat eggs together with oil, water, and lemon juice.

  4. 4

    Pour egg mixture and shredded zucchini into dry ingredients and mix well.

  5. 5

    Fold in walnuts.

  6. 6

    Pour batter into two lightly greased 9-inch loaf pans and bake for 1 hour, or until toothpick inserted into center comes out clean.
