Ingredients

1 hour 30 mins
  1. 1 1/4 cupMulti-purpose gluten free flour way to make i have posted
  2. 1 tbspSugar
  3. 2 tspInstant Clear Gel (optional helps it hold together)
  4. 1/2 tspXanthan Gum
  5. 1/2 tspSalt
  6. 6 tbspUnsalted Butter
  7. 1 largeEgg
  8. 2 tspFresh lemon juice ( I sometimes replace with Vodka )

Steps

  1. 1

    Lightly grease 9 inch pie pan set aside

  2. 2

    Whisk together flour, sugar, clear gel, xanthan gum and salt in medium bowl

  3. 3

    Cut in cold butter in parts into flour mixture until crumbly so pea size chunks are ok

  4. 4

    Whisk egg and lemon juice until foamy

  5. 5

    Mix into dry ingredients until mixture holds together add additional 1 to 3 tablespoons cold water if needed

  6. 6

    Shape into a ball and chill for at least one hour or overnight

  7. 7

    Allow dough to rest at room temp for 10 to 15 minutes before rolling out

  8. 8

    Roll out in between wax paper then pull top wax paper off and invert and put in pie pan only makes one pie crust

  9. 9

    Repeat if making top crust
