Lightly grease 9 inch pie pan set aside

Whisk together flour, sugar, clear gel, xanthan gum and salt in medium bowl

Cut in cold butter in parts into flour mixture until crumbly so pea size chunks are ok

Whisk egg and lemon juice until foamy

Mix into dry ingredients until mixture holds together add additional 1 to 3 tablespoons cold water if needed

Shape into a ball and chill for at least one hour or overnight

Allow dough to rest at room temp for 10 to 15 minutes before rolling out
- 8
Roll out in between wax paper then pull top wax paper off and invert and put in pie pan only makes one pie crust

Repeat if making top crust
