Irvixen's Poor Man's Lobster

My mother used to make this, and it is still my favorite way to prepare fish. My kids and hubby also love it!

Steps
- 1
Using electric skillet or fry pan over high heat, melt 4 tbsp butter. Add fish, onion and celery.
- 2
Cover fish halfway up with water, adjusting water amount as needed. Add bay leaves. Sprinkle generously with garlic salt, dill, paprika and pepper.
- 3
Cook on high heat for 7 1/2 minutes, flip fish and cook for 7 minutes more.
- 4
Discard the sauce you cooked it in. Serve with melted butter for dipping.
- 5
This can be made with any fresh fish fillets. I often use wallye or pan fish like crappie. If using smaller fillets, adjust cooking time.
