Make the pastry crust by carefully mixing all the ingredients together. Form a smooth dough, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes.

Prepare the filling by placing all the ingredients in a large bowl and mixing well with a whisk or hand mixer.

Roll out the pastry and line a 10-inch (26 cm) baking dish (I used a Pyrex dish). Pour in the filling. Cut strips of pastry to create a lattice on top.

Brush with egg yolk and bake at 350°F (180°C) for 1 hour.
