Ingredients

  • For the pastry crust
  • 4 cupsall-purpose flour (about 500 grams)
  • 1 cupunsalted butter (about 250 grams)
  • 1 1/4 cupssugar (about 250 grams)
  • 2whole eggs plus 1 egg yolk
  • 1 pinchsalt
  • 1 pinchbaking powder
  • For the filling
  • 1 1/4 cupscooked wheat berries (about 250 grams)
  • 1 1/2 cupssugar (about 300 grams)
  • 3eggs
  • 1 1/2 cupsricotta cheese (about 350 grams)
  • 3/4 cupmilk (200 ml)
  • 2/3 cupchocolate chips (about 100 grams)
  • 1vial orange blossom flavoring

Steps

  1. 1

    Make the pastry crust by carefully mixing all the ingredients together. Form a smooth dough, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes.

    Prepare the filling by placing all the ingredients in a large bowl and mixing well with a whisk or hand mixer.

  3. 3

    Roll out the pastry and line a 10-inch (26 cm) baking dish (I used a Pyrex dish). Pour in the filling. Cut strips of pastry to create a lattice on top.

    Brush with egg yolk and bake at 350°F (180°C) for 1 hour.
