Ingredients

3 hours 30 mins
4 servings
  • 2spring onions green ends but keep left over bits for rice
  • 7all spice berries or 2 teaspoons of ground all spice
  • 2tablespoons all purpose seasoning
  • 2garlic cloves diced
  • 1/2green and red pepper
  • 425 mlveg stock
  • 1/2onion diced
  • 2cm ginger diced
  • 800 gramsgoat, mutton, lamb
  • 1salt and pepper
  • 1red hot chilli ideally scotch bonnet
  • 6 tbspsunflower oil
  • 1/2lime juice

Steps

3 hours 30 mins
  1. 1

    Heat oil in cast iron pot with lid

  2. 2

    Wash meat and pat dry with kitchen roll season with salt and pepper add lime juice to pan and coat in oil lower heat right down and put lid on and leave for 45 mins

  3. 3

    After 45 mins add 150 Ml of veg stock bring to boil and lower right down and leave again for 45 mins

  4. 4

    Add another 150 Ml of stock and all other ingredients bring to boil lower cover and leave for 2 hours
