Ingredients

12 servings
  • 250 gramsplain flour
  • 3/4 tbspbaking powder
  • 100 gramscaster sugar
  • Zest of 1 lemon
  • Juice from half a lemon
  • 200 mlmilk
  • 50 gramsbutter, melted
  • 50 gramsmixed nuts, chopped
  • 20 gramsdemerara sugar
  • 1large egg, beaten
  • 150 gramsblueberries, rinsed
  • 100 gramschocolate chips/chunks

    Preheat oven to 200'C / gas mark 6. Line a 12 hole muffin tray with your muffin cases.

  2. 2

    Sift flour into a large bowl. Gently stir in the baking powder, caster sugar and lemon zest.

  3. 3

    In another bowl, combine the egg, milk butter and lemon juice. Mix thoroughly.

  4. 4

    Pour the wet mixture into the dry and fold to form a thick, bubbly batter (this may take time depending on arm strength!)

  5. 5

    Fold in the blueberries and chocolate chips. Now spoon the mixture evenly into the muffin cases.

  6. 6

    Finally, top off each muffin with a scatter of mixed nuts and sprinkle with demerara sugar to add crunch.

  7. 7

    Bake for 25 minutes until muffins are well risen and golden. Cool on a wire rack and indulge!
