Oven baked chicken, rainbow slaw, sticky wedges, charred corn

Ingredients

  1. 1random chicken - legs, drums, breast etc - 14 pieces for 4 ppl, in tray and seasoned w s&p and lots of Cajun spices
  2. 1 tbspcorn meal
  3. 2 clovegarlic
  4. 1 as neededolive oil
  5. 4sweet potatoes, each cut in to 6 chips
  6. 1 as neededgarlic, salt, pepper, Rosemary and oil, w stale bread and blend to crumbs
  7. 1/2Apple shredded
  8. 1onion shredded
  9. 2carrots shredded
  10. 1white cabbage shredded
  11. 1/4red cabbage shredded
  12. 4halved sweetcorns
  13. 1lemon, peel of
  14. 1mint or parsley
  15. 1yoghurt, mustard, vinegar

Cooking Instructions

    Rub chicken with seasoning, garlic, spices and oil and corn flour til coated

  2. 2

    Add potatoes to pan, salt and pepper and olive oil and corn meal

  3. 3

    Add chicken to bottom of oven and chips to middle, 20 mins at 190 C

  4. 4

    2 -3 tables flour, add a little water to make a paste, use to stick breadcrumbs to chicken. return to tray back in oven for 40 mins

    Mix slaw with dressing made of 3 tables yoghurt, s&p, good teaspoon mustard, 1-2 tsp ww vinegar, splash olive oil. add small handful of fresh mint or parsley

    Put corn to char on griddle

  7. 7

    Add lemon peel to jug w table spoon fine sugar, squeeze in juice and add in whole lemon. any mint? top with ice and fill w water. mix

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
