Ingredients

40 mins
3-4 people
  • 150 gfirm tofu diced
  • 150 gpork steak thinly sliced
  • 2 tblsrice oil
  • 1 tblssesame oil
  • 40 gcashews
  • 2 clovesgarlic sliced
  • 1red chilli de-seeded and sliced
  • 2pak choy cut lengthways in to 8ths
  • 6spring onions chopped to 2cms strips
  • 2 tblsmirin or dry sherry
  • 2 tblslow salt soy sauce
  • 1 tblsrunny honey
  • 1 tblssesame oil
  • 2 tblsrice wine vinegar
  • 1 tblspepitas

    Dry fry cashews for a couple of minutes to brown, then lightly crush in p+m.

    Pat dry tofu and pork before cutting. Roll pork in ground pepper and tofu in salt and pepper. Fry tofu for 8-10 mins until browned and crispy on the outside. Fry pork 1 minute per side. Remove and drain on kitchen paper. Wipe out frying pans and add fresh sesame oil if necessary.

    Medium high heat. Add garlic and chilli. Fry for a minute. Add pak choy and Spring opinions. Fry 4 mins until softens. Stir in mirin, soy, honey, sesame oil, vinegar. Toss. 1-2 mins on heat. Add cashew and either tofu or pork. Toss to warm through then serve. Sprinkle with pepitas.

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
