Healthy Chewy Coconut Date Cookies

Preheat the oven to 350°F. In a Vitamix blender or food processor, blend the almonds until they are in small chunks but not yet a flour. Move to a bowl and mix in the coconut, cacao nibs, pumpkin seeds, cinnamon, and nutmeg. In the same Vitamix or food processor, blend the dates, water, and coconut oil until they become a thick paste. Add the date paste into the bowl with the flour and mix well until fully incorporated and you have a sticky dough. Form cookies and place on a lined baking sheet. Make sure they are flattened like cookies because these will not rise. Top with the extra date ripped into pieces, coconut, cacao nibs, and pumpkin seeds. Bake for 13 minutes. Let cool for 10 minutes.
