Bottle gourd kheer/Lauki ji kheer as it’s commonly called, is nutritious during fasts and even a yummy dessert otherwise on any occasions

Place the grated bottle gourd in a cup filled with cold water for 10 minutes

Squeeze all the water from the grated bottle gourd and keep them in another bowl

Melt 1 tablespoon ghee in a saucepan and add the bottle gourd and salt
- 4
Mix and saute till all the moisture has dried(the gourd will release some water after combined with salt)

Add milk and sugar. Bring to a boil once

Then reduce heat and let the kheer cook simmering till gourd has softened

Once the kheer has reached the desired consistency and the gourd softened, take off heat and mix the rose water

In a tadka pan, melt the remaining ghee and brown the cashews and raisins for a minute

Immediately add them in the kheer along with the ghee. Mix well
- 10
Serve hot and yummy lauki ki kheer or refrigerate for 30minutes before serving if you prefer cold kheer.Enjoy!
