Put oil in pan get hot

Add fish to hot oil to test add a bamboo utinsel like a chop stick if it bubbles whe you put an end in its hot enough

After salting the fish mix flour cornmeal salt and pepper together dredge the fish in the mixture

Put into frying pan if fish is fresh or thawed which I recommend it won't take long but remember the thicker the fish the longer it takes to cook if thick low and slow low heat longer time but make sure the temperature is hot enough or you will get oily fish

Turn your fish when it curls on edge a bit turn it carefully not to splash hot oil on yourself

When done put on paper towels to drain excess oil this is pan frying Southern style hope you enjoy!
