Ingredients

  1. 1shoulder of lamb
  2. 1aubergine
  3. 1courgette
  4. 2carrots
  5. 1x 400g tin of chopped tomatoes
  6. 1 jarblack, pitted olives
  7. 2 tspcumin
  8. 1 tsppaprika
  9. 1cinnamon stick
  10. 1 tspcoriander
  11. 1 jartagine paste
  12. 6shallots
  13. 2garlic cloves
  14. Salt and pepper
  15. 2 tspsugar
  16. 100 gsoft apricots
  17. Lamb stock to cover meat
  18. 2 tbspcornflour mixed to paste

Steps

  1. 1

    Coat lamb shoulder in paste.

  2. 2

    Chop vegetables into small cubes (1cm) add to slow cooker.

  3. 3

    Add tinned tomatoes and stock so liquid covers meat.

  4. 4

    Stir in spices and seasoning.

  5. 5

    Add cornflour paste to thicken sauce 2hours from end.

  6. 6

    Slow cooker on high for 5 hours or medium for 6-8hours

  7. 7

    Taste and add seasoning as required.

  8. 8

    Serve with lightly toasted pitta bread and couscous
