Ingredients

5Egg yolks (save whites)
1Egg
1 lbSoftened butter
1 cupSugar
4 1/2 cupSifted flour
1/2 tspBaking powder
1Lemon (grated rind and juice)
egg white mix
1Egg white
3 tspSugar
1 tspCinnamon

Cream butter and sugar

Add eggs and beat 5 minutes with mixer

Add flour, baking powder, lemon juice, and lemon rind - mix well

Chill until dough is easily handled (if baking in batches chill dough on/off so it will be easily handled)

For egg white mix: beat egg whites, sugar, and cinnamon until frothy

Pinch small piece of dough, roll into stick, and shape into "S"

Place on un-greased sheet

Brush with egg white mix

Bake at 375?F for about 12 minutes (don't let them get too brown on the bottom

Cool on wire rack (be gentle as the cookies are delicate)
