Preheat oven to 150°F Celsius

Roughly chop the veg

Heat oil in a saucepan

Crush garlic and add to oil

Fry for about 1 minute

Add veg and fry for 2 minutes

Add tomatoes, beans and stock

Turn down heat to low and stir well

Add flavours

Stir well and simmer for 2 minutes

Pour chilli into a casserole dish

Cover with foil and bake for at least 40 mins to 1 hour

Uncover and bake for a further half an hour

Serve with brown rice, a baked potato or bread
