It's time for this delicious traditional dessert from our region, leche frita. We usually make and enjoy it around this time of year, so let's get started.

Heat the milk with the cinnamon stick and lemon peel over medium-low heat to infuse the flavors. Before it comes to a boil, remove the lemon peel and cinnamon stick.

Add the cornstarch and stir well, then add the sugar and stir again.

Continue stirring constantly until the mixture thickens.

Pour the mixture into a rectangular dish and let it cool until set. Once cooled, cover with plastic wrap directly on the surface to prevent a skin from forming. Refrigerate for several hours or overnight until fully set.

Heat the oil in a skillet. Place flour on one plate and beat the eggs in another plate.

Cut the set mixture into squares with a knife. Dredge each square first in flour, then in beaten egg.

Fry the squares on both sides until golden, then transfer to a plate lined with paper towels to absorb excess oil.

On a plate, mix about 1/2 cup sugar (100 grams) with 1 tablespoon ground cinnamon. Coat each piece well in the cinnamon sugar mixture.

Refrigerate before serving. After chilling, the sugar forms a syrup and the texture becomes firmer. Enjoy!
