  • 2 lbchicken breasts
  • 1/4 tspsalt
  • 1/4 tspblack pepper
  • 1 1/4 cupLight coconut milk
  • 1 cupskim milk
  • 3 1/2 tbspRed curry paste
  • 3/4 cupsalted cashews
  • 3/4 cupunsweetened coconut flakes
  • 3/4 cupcorn flakes
  • 1 headBaby spinach

Steps

  1. 1

    Cut chicken 3 × 1/2 inch strips

  2. 2

    Whisk together

  3. 3

    Pulse together in food processor

  4. 4

    Dip chicken in milk then flakes

  5. 5

    Place chicken on wire rack on aluminum foil-covered pan.

  6. 6

    Preheat oven to 400°F

  7. 7

    Bake in oven for 10 minutes turning once halfway through.

  8. 8

    Cook rice while chicken is baking.
