Buffalo Chicken & Potato Casserole

Ingredients

6 servings
  1. 2 lbchicken breasts cubed
  2. 10Med Red Potatoes cubed
  3. 1/3 cupolive oil
  4. 1 1/2 tspsalt
  5. 1 tbspground black pepper
  6. 1 tbsppaprika
  7. 2 tbspgarlic powder
  8. 6 tbspHot Sauce
  9. 2 cupgrated cheese (Mexican blend)
  10. 1 cupbacon (cooked & crumbled)
  11. 1 cupgreen onions chopped

Cooking Instructions

    Preheat oven to 500°F

  2. 2

    Spray 9 x 12 Baking Dish with oil.

    In large bowl combine oil, salt, pepper, paprika, garlic powder & hot sauce.

    Add potatoes to oil mixture and toss well. Spoon potatoes into prepared dish. Leaving as much of the oil mix behind.

    Roast potatoes until nice & crispy. Stir every 15 min or so, for about 50 mins.

    Add cubed chicken to bowl with the oil mix and toss well.

    Mix cheese, bacon & onions in bowl

  8. 8

    When potatoes are nice & crispy take out & lower temp to 400.

    Now top with raw chicken & cheese mixture and bake for another 15 - 20 mins.

My kids absolutely love this recipe. Their not big on onions so I just left them out. Not much of a difference. :positive
