Ingredients

  • 1 CupMilk
  • 1/2 TablespoonCinnamon
  • 1 1/2 CupsOil for frying
  • 1/4 Cupfreshly squeezed Lemon Juice
  • 2 CupsAll Purpose Flour
  • 1/2 TeaspoonBaking Powder
  • 3 TablespoonMargarine
  • 4 TablespoonSugar
  • PinchSalt
  • 2Eggs
  • 1 TablespoonLemon Zest

Steps

  1. 1

    Mix flour, salt and baking powder. Add Margarine/butter and rub with your hands until they form breadcrumbs

    Add cinnamon and lemon zest, into the flour

    Mix milk ad eggs in a small cup and whisk well

    Pour the wet ingredients into the dry ingredinets

    Add lemon juice to the dough and continue to knead the dough

    Knead until the dough is smooth. Cover to rest 30 minutes

    The dough will have doubled in size

    Divide the dough into four equal sizes

    Roll out one of the dough into your desired thickness

    Use the rim of a glass to cut out round shapes

    Repeat the process until the whole dough is cut into round shapes

    Heat a heavy deep bottomed pan until the oil is hot. Drop the mandazi a few at a time. Fry until golden brown. Put in large bowl covered with paper towel to drain excess oil and keep warm

    You can choose to have flesh inside your mandazi or have the mandazi be hollow. Rolling thick or thin will will give you either
