This is an adaptation of my pancake recipe (which I'd worked on for about 10 years) which I'd made after I got a waffle iron. I might like these even better, so definitely give it a try! Makes a great breakfast when you want something nice but don't want to spend too much time either.

We love to cook up this BIG batch of waffles and put them in the freezer for a quick & easy meal later.

These are easy to make and turn out perfect.
