Combine fruit and spices and bring to boil. Let simmer for 10 minutes. Let cool.

Combine flour, baking soda and salt in bowl.

Add beaten egg to fruit mixture.

Add dry ingredients to fruit mixture.

Fold ingredients together.

Grease pan and add parchment, then grease parchment.

Pour batter into 2 pans. 3/4 full. Large 12x4, small 9x4.

Put roaster in oven and add 1 inch of boiling water. Place loaf pans in roaster.

Preheat oven to 300?F.

Bake large loaf pan for 1.5 hours in roaster with lid. Remove from roaster and bake for another 30 minutes. For small loaf pan, 1 hour in roaster, 30 minutes out.
