Ingredients

  1. Fruit and spices
  2. 1/2 cupButter
  3. 2 cupDark raisins
  4. 1 cupGolden raisins
  5. 1 cupDates (finely chopped)
  6. 2 cupCandied cherries
  7. 100 gramsPecans (chopped fine)
  8. 2 cupBrown sugar
  9. 2 cupCold water
  10. 1 tspCinnamon
  11. 1 tspCloves
  12. 1 tspAllspice
  13. Cake
  14. 2 cupFlour
  15. 2 tspBaking soda
  16. 1/2 tspSalt
  17. 1Egg

Steps

  1. 1

    Combine fruit and spices and bring to boil. Let simmer for 10 minutes. Let cool.

    Combine flour, baking soda and salt in bowl.

  3. 3

    Add beaten egg to fruit mixture.

  4. 4

    Add dry ingredients to fruit mixture.

  5. 5

    Fold ingredients together.

  6. 6

    Grease pan and add parchment, then grease parchment.

  7. 7

    Pour batter into 2 pans. 3/4 full. Large 12x4, small 9x4.

  8. 8

    Put roaster in oven and add 1 inch of boiling water. Place loaf pans in roaster.

  9. 9

    Preheat oven to 300?F.

  10. 10

    Bake large loaf pan for 1.5 hours in roaster with lid. Remove from roaster and bake for another 30 minutes. For small loaf pan, 1 hour in roaster, 30 minutes out.
