Ingredients

  1. enchiladas
  2. 1 tspwhole cumin
  3. 1 tspwhole cloves
  4. 1 tspblack peppercorn
  5. 1 tsporegano
  6. 2garlic cloves
  7. 3 cupchicken broth
  8. 1 tbspsalt
  9. 25guajillo peppers,dried
  10. 1whole chicken cut up,boiled
  11. 1/2onion (for broth)
  12. 1/2onion (for sauce)
  13. 1/2onion (for topping)
  14. 1 headof cabbage (topping)
  15. 116oz package of queso fresco cheese (topping)
  16. 2avocados (optional for topping)
  17. 1 canof pickled jalapenos whole or sliced
  18. 1container of sour cream or you can use authentic creama
  19. 15tortillas (corn) homemade is best but you can find them and the rest of these ingrediants at your local spanish market

    First cut up and boil chicken

  2. 2

    While chicken boils,take guajillo peppers and place in one layer on hot griddle flip after 2 minutes then turn off heat clean peppers of any stems,seeds,and veins

  3. 3

    Place cleaned guajillo peppers,garlic,onion,clove,cumin,peppercorn,oregano,stock,and salt in a blender blend until smooth

  4. 4

    Take a skillet and put some oil in the bottom get hot then run tortilla through red sauce and cook for 4 minutes on each side remove,drain on paper towels

  5. 5

    Take chicken and follow the same steps as 4,place on a paper towel to drain

  6. 6

    Take sour cream and rest of your topping and put them on top of your enchilada and add chicken and cheese last
