First cut up and boil chicken

While chicken boils,take guajillo peppers and place in one layer on hot griddle flip after 2 minutes then turn off heat clean peppers of any stems,seeds,and veins

Place cleaned guajillo peppers,garlic,onion,clove,cumin,peppercorn,oregano,stock,and salt in a blender blend until smooth

Take a skillet and put some oil in the bottom get hot then run tortilla through red sauce and cook for 4 minutes on each side remove,drain on paper towels

Take chicken and follow the same steps as 4,place on a paper towel to drain

Take sour cream and rest of your topping and put them on top of your enchilada and add chicken and cheese last
