Ingredients

  1. 3Chopped or sliced Field Mushrooms
  2. 1 canCreamed Corn
  3. 1Chopped large Onion, or 2 small
  4. 3Bay Leaves
  5. 2 tbspChicken Stock Powder
  6. 2Diced Chicken Breasts
  7. 1 packagesFlat Rice Stick Noodles
  8. 1/4 cupSoy Sauce
  9. 2 tbspOlive Oil
  10. 1 tbspMinced Garlic
  11. 1 tspBlack Cracked Pepper

  1. 1

    Pour oil into large pot. Add onion, chicken, garlic, stock powder and pepper. Fry til chicken is brown.

  2. 2

    Add soy sauce and mushroom, fry til mushrooms are soft.

  3. 3

    Add can of creamed corn, bay leaves and around 3-4 cups of water. If preferred, exchange the powdered stock for a litre liquid stock here.

  4. 4

    When the pot comes back to the boil, add rice noodles. Stir after 5 minutes, cook further 10 minutes. The noodles should have soaked up the broth and be ready to serve in bowls.
