This recipe brings back memories of my family.

Boil the meat with half the onion, a garlic clove, and enough water (I use a pressure cooker, and it takes about 20 minutes).

Meanwhile, slice the tomatoes and the rest of the onion into thin strips or sixths.

Once you can open the pot, if there's too much water, remove some and save it for rice.

Remove the garlic and onion, then add the tomatoes.

Place the meat on top of the tomatoes to absorb the flavor.

Add two tablespoons of Knorr pork seasoning or salt.

Add pepper to taste and the bay leaves.

Add the chipotle peppers, cover, and let it simmer for another 20 minutes.

Let it rest before opening the pot, taste, adjust the seasoning, and enjoy.

Tip: If you have a larger family, buy more pieces of pork shank and add 3 more green tomatoes and 1 more bay leaf for each additional piece. Adjust the saltiness, spiciness, and brothiness to your liking.
