Method:
Wash and soak dal and rice separately for 5...6 hours.
when soaked...first make smooth batter of urad dal
then make smooth batter of rice.
add salt and mix well...
keep for ferment 6--8 hours - 2
Batter should be risen well. or u will not get SPONGY idli
The batter should be thick when batter ready u can make Idli - 3
Now get your steamer ready for idli...put on a flame...
apply oil nicely with brush or hand on moulds of plates
fill with batter
Place this idli plates into steamer and steam for 8 to 10 mins. - 4
U can chk...it's ready or not Once it is steamed,cool for a while...then try to remove it
if hot.....u will not get the back side smooth so...slowly...do it - 5
Method
coconut,, roasted chana daliya, green chillies, salt and a little water and lemon juice in a blender. - 6
Make smooth...pour in a bowl.

Add water as u need

Heat the oil add the mustard seeds and urad dal.
When the mustard seeds crackle, add the asafoetida,curry leaves and red chillies and sauté on a medium flame for a few seconds
Pour this tempering over the coconut chutney and mix well.. - 9
IDLI....CHUTNEY............is ready to serve....... SOUTH SPECIAL....yummy and Healthy. Breakfast
