Banana Muffins
Banana muffins are just like banana bread, but in a form of a muffin - what could be better than that? The original recipe came from http://allrecipes.co.uk/recipe/36/delicious-banana-muffins.aspx, then it was modified by my wife, and the only thing I did as an apprentice is to cook it and write it up here.

The original recipe came from http://allrecipes.co.uk/recipe/36/delicious-banana-muffins.aspx, then it was modified by my wife, and the only thing I did as an apprentice is to cook it and write it up here.
Steps
- 1
Preheat the oven to 180 C.
- 2
Sift flour, baking powder and bicarbonate of soda together into a bowl, set aside.
- 3
Melt the butter in a pan. Meanwhile, mash the bananas in a bowl. Add cinnamon, ground cardamom, caster sugar, melted butter and the egg to the bananas and mash together
- 4
Add in the flour mixture to the mash, and mix until smooth. Then mix in nut and dark chocolate chips mix.
- 5
With a spoon, put the mixture into a muffin tin with paper baking cases inside.
- 6
Place a walnut on top of each muffin.
- 7
Put the muffins into the oven for 25 minutes. Then check if they're done by poking one of the muffins with a toothpick. If it is dry, the muffins are ready. If not, put them back in the oven for another 5 minutes, and you're done!
