Ingredients

Serves 4 servings
  1. For the sponge cake:
  2. 2eggs
  3. 1/3 cupgranulated sugar (about 62.5 grams)
  4. 1 packetvanilla sugar
  5. 2 tablespoonsall-purpose flour (about 15 grams)
  6. 1/4 cupcornstarch (about 35 grams)
  7. 1/2 packetbaking powder
  8. 1 pinchsalt
  9. For the strawberry sauce:
  10. 2 cupsstrawberries (about 300 grams)
  11. Juice of 1/2 lemon
  12. 1/4 cupgranulated sugar (about 50 grams)
  13. 2 sheetsgelatin
  14. For the cream:
  15. 1/2 cupnonfat plain yogurt (about 125 grams)
  16. 2/3 cuplight whipping cream (about 150 ml)
  17. 1 packetwhipped cream stabilizer (optional)
  18. 1/3 cupgranulated sugar (about 80 grams)
  19. 1/2 teaspoonvanilla extract
  20. 1 pinchsalt

Steps

  1. 1

    Prepare the sponge cake:
    - Preheat the oven to 350°F (175°C)
    - Separate the egg whites from the yolks
    - Soak the gelatin sheets in cold water to soften

  2. 2

    In a mixing bowl, beat the egg yolks with the sugars until the mixture is pale, then add the flour, cornstarch, and baking powder. Mix well.

  3. 3

    Beat the egg whites with the salt until stiff peaks form, then gently fold them into the batter in thirds.

  4. 4

    Pour the batter onto a silicone baking mat and bake for about 15 minutes.

  5. 5

    Make the strawberry sauce:
    - Wash and hull the strawberries
    - Blend them with the lemon juice, add the sugar, and blend again
    - Bring the sauce to a boil in a saucepan, then add the 2 softened gelatin sheets. Set aside.

  6. 6

    Prepare the cream:
    Beat the yogurt with an electric mixer on high speed for 3 minutes to aerate.

  7. 7

    Add the whipping cream and beat until stiff peaks form, then add the whipped cream stabilizer if using.

  8. 8

    Add the sugar and vanilla extract.

  9. 9

    Gently fold in the strawberry sauce.

  10. 10

    Assembly:
    - Cut out and place a round of sponge cake in each parfait glass
    - Spoon the strawberry mousse over the sponge cake
    - Finish with the cooled strawberry sauce and chill for at least 4 hours.
