Ingredients

4 servings
  • 4 cupsrice
  • Kpanla(fresh stock fish)
  • 4 sticksgiant Carrots
  • Green pea
  • 2fresh Green pepper
  • Spring onion
  • 2Onion balls
  • Thyme
  • Yellow pepper
  • Groundnut oil
  • 1satchet Mivina spice
  • cubeSeasoning
  • to tasteSalt

Steps

  1. 1

    Wash and parboil rice for just 15minutes

  2. 2

    Add two cups of water to the fish and Boil fresh stock fish with thyme, seasoning cube, onions and salt to taste for 5 to 10minutes.

  3. 3

    Remove fish and fry in groundnut oil. Then set aside.

  4. 4

    Cook the rice in the fish stock, add seasoning cube, mivina, a little groundnut oil and salt to taste. Cook till its done but not soft.

  5. 5

    Fry the carrots, green pea, spring onions, green pepper and onion in groundnut oil. Add a little seasoning cube and salt and stir till carrot is a bit soft.

  6. 6

    Mix the whole carrot mixture with the cooked rice and serve hot.

  7. 7

    Alternatively, take a portion of the carrot mixture and a portion of the rice and mix one after the other. It helps the mixture to go round. And serve hot.
