This is my classic lemon crumble cake, a favourite for breakfast and occasions.

Line 3 9" tins and set the oven to 170° for 45mins

Combine all the dry ingredients together and whisk

Combine milk, eggs, lemon juice, lemon zest and oil and whisk together on medium speed for 1minute
- 4
Sift in the dry ingredients and mix on low speed until well combined.

Use a spatula to ensure all ingredients are well combined
- 6
Divide mixture evenly into the three tins and bake @170° for 30-35 mins or until tester comes out clean
- 7
Let the cakes cool for 10-15 mins before transferring to a cooling rack
- 8
Decorate as desired and enjoy
