Argentinian Style Chimichurri Sauces (3. Special Chimichurri Sauce)

In Argentina we have a multiple varieties of chimichurri sauces with different ingredients that people like to add to it.
I will show you three of the varieties that i know and you can choose the type that you prefer to do. I usually use the classic chimichurri sauce.
The basic ingredients that always come in any chimichurri sauce are: fresh italian parsley/flat leaf parsley, garlic, oregano, chopped red pepper, white pepper and salt.
Then the oil and vinegar you choose.
This is a great sauce on all kind of grilled meats.
I chose the classic chimichurri sauce, what kind of chimichurri sauce whould you like to make? 🙂

The chimichurri basic proportions are:

For every cup of minced parsley - 1/2 cup of minced garlic

For every 1 tablespoon of crushed red pepper - 1/2 tablespoon of oregano - 1/4 tablespoon of white pepper

For every 1 1/2 cup of oil - 1/2 of vinegar

Ingredients

  3. 1 1/2 cupfinely chopped fresh italian parsley/flat leaf parsley
  4. 3/4 cupfinely minced garlic
  5. 1 tablespoonfinely chopped fresh oregano or dry oregano
  6. 2 tablespoonscrushed red pepper
  7. 1/4 tablespoonwhitte pepper
  8. Salt (to taste)
  9. 3. Special Chimichurri Sauce:
  10. Use basic ingredients plus:
  11. 1 tablespoonpaprika
  12. 1/2 tablespooncumin
  13. 1/2 tablespoonfinely minced fresh rosemary
  14. 1bay leaf (optional)
  15. 3/4 cupolive oil
  16. 1/4 cupwine vinegar

    Basic ingredients that go in the three recipes

    Special chimichurri sauce ingredients:

    In a bowl put the parsley, white pepper, salt, oregano, crushed red pepper, garlic, paprika, cumin, rosemary, oil and vinegar, mix well

  4. 4

    Put all the ingredients in an airtight glass container, add the bay leaf

  5. 5

    Seal the container and place it in the refrigerator for at least 1 day before eating to allow the flavors to really come out.
    The chimichurri Sauce keeps stored in the refrigerator for up to 1 month.
