In Argentina we have a multiple varieties of chimichurri sauces with different ingredients that people like to add to it.
I will show you three of the varieties that i know and you can choose the type that you prefer to do. I usually use the classic chimichurri sauce.
The basic ingredients that always come in any chimichurri sauce are: fresh italian parsley/flat leaf parsley, garlic, oregano, chopped red pepper, white pepper and salt.
Then the oil and vinegar you choose.
This is a great sauce on all kind of grilled meats.
I chose the classic chimichurri sauce, what kind of chimichurri sauce whould you like to make? 🙂

The chimichurri basic proportions are:

For every cup of minced parsley - 1/2 cup of minced garlic

Ingredients

  • Amounts in my recipe:
  • The basic ingredients:
  • 1 1/2 cupfinely chopped fresh italian parsley/flat leaf parsley
  • 3/4 cupfinely minced garlic
  • 1 tablespoonfinely chopped fresh oregano or dry oregano
  • 2 tablespoonscrushed red pepper
  • 1/4 tablespoonwhitte pepper
  • Salt (to taste)
  • 2. Hot Chimichurri Sauce:
  • Use basic ingredients plus:
  • 1small finely chopped jalapeño with or without seeds (more hot/less hot)
  • 1/2 cupfinely chopped fresh basil
  • 1bay leaf (optional)
  • 3/4 cupcorn oil or sunflower oil
  • 1/4 cupapple cider vinegar or wine vinegar

Steps

    Basic ingredients that go in the three recipes

    Hot chimichurri sauce ingredients:

    In a bowl put the parsley, white pepper, salt, oregano, crushed red pepper, garlic, jalapeño, basil, bay leaf, oil and vinegar, mix well

    In an airtight glass container put all the mixed ingredients and add the bay leaf

    Seal the container and place it in the refrigerator for at least 1 day before eating to allow the flavors to really come out.
    The chimichurri Sauce keeps stored in the refrigerator for up to 1 month.
