Ingredients

4 servings
  1. 2 tspOlive Oil, extra virgin
  2. 1 lbboneless skinless chicken, chunked
  3. 1 Tbspcornstarch
  4. 1/8 tspSalt
  5. 1/8 tspPepper
  6. 2 cupsfresh sugar snap peas
  7. 1 canfrozen OJ, unprepared
  8. 2 tbspsoy sauce
  9. 2 tbspfresh ginger, grated
  10. 1jalapeno pepper, minced (de-seed half or more if you are sensitive to spice)

Steps

  1. 1

    Mix frozen OJ, soy sauce, ginger, and jalapeno. Set aside

  2. 2

    Lightly dust chicken with cornstarch, salt and pepper.

  3. 3

    Brown chicken in oil until cooked through, set chicken on paper towel to drain.

  4. 4

    Add the sauce mixed in step 1 to the hot pan, cook until bubbly over medium heat.

  5. 5

    Return chicken to the pan and add sugar snap peas

  6. 6

    Stir, reduce heat, simmer ~5-10 min or until peas are cooked to desired texture. If desired you can thicken sauce by crumbling gingersnap cookies in, be sure to stir well.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
